In announcing the delay, director James Cameron admitted that targeting a 2016 release was overly ambitious.
Much of the postponement has to do with the plan to write and develop all of the planned sequels simultaneously.
There will be 3 and tackling them all at once is a measure they’re taking to ensure that the films’ content is cohesive, and that each installment furthers the story to a satisfying end.
