Ingredients :
120 grams chopped dark chocolate (70% cocoa)
240 grams cocoa powder
240 grams flour
8 grams baking powder
7 beaten eggs
200 grams heavy cream
130 grams butter
470 grams sugar
1 gram salt
Serves 6
Recipe
1. Beat the sugar and the heavy cream. Slowly add in the eggs while continuing to mix. Meanwhile, combine the flour, cocoa powder, salt and baking powder. Add to the first mixture, stirring constantly.
2. Melt the butter in the microwave and slowly incorporate it into the batter, stirring gently. Finally, add in the chopped chocolate.
3. Pour the batter three-quarters of the way up a lightly greased nonstick pan or baking tin lined with parchment paper. Make sure that the batter is evenly distributed.
4. Bake at 150°C (300°F) for 55 minutes in a convection oven.
