Recipe for: Aubergine Parcels
A great combination of aubergine and lamb. fabulous for party or buffet.
Ingredients:
2 aubergines
250g mince lamb
1 teaspoon ground white pepper
1 teaspoon salt
Half of a cm ginger root
100g Plain flour
2 eggs
100ml milk
Methods:
Chop ginger
Place the mince lamb into a bowl and add the ginger
Add the white pepper, salt and 1 Tbsp of oil
Then mix ingredients together
Slice aubergine into 0.5cm thick slices
Then Insert a cut between each slice to create a pocket
Take about 1 Tsp of mince lamb and stuff into the pocket
Combine the plain flour, milk, salt and eggs to form a batter
Heat 1 litre of oil in a wok until hot
Dip the stuffed aubergine slices into the batter mix
Place the slices into the hot oil
Deep fry for 2 minutes each side
Remove from the oil and drain
Transfer onto a dish
Garnish and serve
