CHINESE WATERCRESS SOUP WITH PORK RIBS

Ingredients

300g watercress (wash and cut into 2in length) 
500g pork ribs (parboil for 5mins) 
2 honey dates 
10 red dates (soaked & pitted) 
8 chinese figs (soaked & rinsed) 
1 tablsp goji berries 
1 teasp salt 
8 cups of water 
 
Method

1. In a smart cooker or slow cooker boil 
   8 cups of water. When water boils add  
   all ingredients. 
2. Set the tomer to 4 hours. Set timer  
   to 2 hours if you dont want a long boil 
3. After 4 hours the soup is ready to be 
   served.
