It was an entertaining first period where both sides had chances, but Watford led at the break through Vakoun Bayo.
Albion started the second half poorly and fell further behind as Bayo bagged his second - before Jayson Molumby got the Baggies back in the game.
But they could not find an equaliser and they fell to their first defeat since October 1.
