Bhuna Masala Gosht
Ingredients :

Oil 1/2 cup or more as per your preference
Cloves 6
Black peppercorns 8-10
Black cardamoms 2
Green cardamoms 4
Cinnamon sticks 2
Bay leaves 2
Mace flower 2
Onions 2 big, sliced
Mutton 1 kg (or beef)
Salt to taste
Ginger garlic paste 2 Tbsp

For Paste:
Yogurt 1/2 cup
Fried onions 1/2 Cup
Coriander powder 2 Tsp
Kashmiri red chilli (or Paprika powder) 2 Tsp
Cumin powder 1 Tsp
Turmeric powder 1/2 Tsp

Garnish :
Fresh coriander
Green chilies

Directions:

1. In a pressure cooker, add oil, onion and all the whole spices. Saute until onion is soft.

2. Add ginger garlic paste and saute for a few minutes.

3. Add meat and salt and cook on high heat until the smell of meat is gone 10-12 minutes.

4. Add 1 cup water and pressure cook for 4 whistles until the meat is fully cooked. Relase the pressure and check the meat.

5. Blend together the ingredients of the paste (yogurt, paprika, turmeric and coriander powder cumin powder and fried onions), add and mix well.

6. Allow to cook for 10-15 minutes until the yogurt is cooked and oil rises to the top.

7. Garnish with fresh coriander and chilies and enjoy with naan or roti.
