Replying to @haileebastien DAY 38 of my salad series is a celery caesar 🧀🥗
recipe (makes 2 servings)
1. preheat oven to 350F
2. crumble 1 slice of sourdough bread into small pieces and lay flat on a sheet pan
3. drizzle with 1 tsp olive oil, toss to coat, and place into the oven for 10-15 mine until crispy and golden brown
4. while the breadcrumbs bake, 3 celery stalks into matchstick pieces
5. make the caesar dressing by whisking together 3 tbsp nonfat plain greek yogurt, 1 tbsp olive oil, 1 tbsp minced capers, 1 tsp dijon, 1 tbsp parmesan cheese, 1/4 tsp minced garlic, juice of 1/2 lemon, pinch of sea salt and fresh ground black pepper
6. drizzle the dressing over the celery, top with sourdough bread crumbs, 1 tbsp fresh grated parmesan, lemon zest, and enjoy!
