Replying to @Lanee' Kelley DAY 39 of my salad series is a blached asparagus caesar with sliced radishes, whole wheat breadcrumbs, greek yogurt caesar dressing, parmesan, and chives! 🧀
recipe (makes 1 serving)
1. place a large pot of water on high heat and bring to a boil
2. wash and pat dry ~20 asparagus spears
3. cut 1-2 inches off the bottom of the asparagus
4. add the asparagus spears to the pot of boiling water for 1 minute, and then transfer to a separate bowl of ice water
5. crumble 1 slice of whole wheat bread onto a baking sheet, spray with olive oil, and add 1 pinch of garlic salt
6. place into the oven on broil for 5-8 mins until breadcrumbs are golden brown and crisoy
7. in a small mixing bowl whisk together 3 tbsp nonfat plain greek yogurt, 1 tbsp olive oil, 1 tbsp minced capers, 1 tsp dijon, 1 tsp parmesan cheese, 1/4 tsp minced garlic, juice of 1/2 lemon, a pinch of sea salt, and 1 tbsp water
8. cut asparagus into 1” pieces and drizzle the greek yogurt caesar dressing over the asparagus to coat
9. plate asparagus with 1 sliced radish, 2 tbsp whole wheat breadcrumbs, 1 tbsp parmesan cheese, 1 tbsp chopped chives, and enjoy!
