Welcome to "Perpetual's Kitchen".
Bangda Curry (Mackerel Curry) is a popular coastal Indian dish, especially in regions like Maharashtra, Goa, and Karnataka. It features bangda (mackerel) fish cooked in a rich, spicy, and tangy coconut-based curry😊
♦️Here's a classic recipe:-
☛FOR MARINATION:-
* Take 4 Bangda (Mackerel) in a bowl (Glutted, Washed & cut into half)
* Add ½ tsp Turmeric powder.
* ½ tsp Salt.
* Mix well.
* Set aside for 10 minutes to marinate.
☛FOR MASALA PASTE:-
* ½ cup of sliced coconut.
* ½ cup Coriander leaves.
* 2 Sliced onions.
* 15-20 Garlic cloves.
* 1 inch roughly chopped ginger.
* 2 Green chillies - cut into two.
* 15-20 whole black peppercorns.
* ½ tsp Cumin seeds.
* ½ cup water.
* Grind it.
* Our Masala Paste is Ready.
⬗Method:-
* Heat ½ cup of oil in a kadai (WOK)
* Add ½ tsp of Cumin seeds, 10-15 Fenugreek seeds & ½ tsp finely chopped Garlic. Stir & fry.
* Add 1 finely chopped onion & fry until they turn light brown in colour.
* Add the masala paste. Stir & cook.
* Add 2 tbsp Kashmiri red chilli powder, 1 tbsp Coriander powder & ½ tsp Turmeric powder. Stir, mix & cook well.
* Wash the grinding jar in which we made the masala paste & pour that water into the kadai. Stir & cook well.
* Add 3 tomatoes puree. Mix & cook well.
* Close the lid & let it cook on high flame for 5 minutes.
* Open the lid after 5 minutes & mix well.
* Add water - 1 cup.
* Salt as per your taste (NOTE:- We also added salt to the fish pieces while marinating them)
* Curry leaves - 1 sprig.
* ½ tsp Garam masala.
* 8-10 Kokum (Garcinia Indica) - Soaked in water.
* Mix well.
* Close the lid & let it cook on low flame for 5 minutes.
* Open the lid after 5 minutes & mix well.
* Add the marinated fish & mix well.
* Close the lid & let it cook on low flame for 5 minutes.
* Open the lid after 5 minutes. shake & mix well.
* Add some chopped coriander leaves & gently mix well.
* Turn off the gas & let the curry rest for 10 minutes for flavors to blend.
OUR AUTHENTIC MALVANI "BANGDA CURRY" IS READY TO SERVE😋😊
