DAY 11 of my soup series is a creamy basil tortellini soup 🌱🍲 hope you enjoy!
recipe
1. boil a pot of water and cook 10 oz cheese tortellini according to package instructions
2. add 1 tbsp olive oil to a separate large pot over medium heat along with 1/2 cup chopped celery, 1/2 cup diced yellow onion, and 1/2 cup chopped carrots
3. sauté for 5 mins until vegetables soften and then add 1 cup chopped cherry tomatoes, 1 tbsp minced garlic, and 3 tbsp tomato paste
4. in a small mixing bowl whisk together 1/2 cup half and half with 2 tbsp AP flour
5. pour the half and half mixture into the large pot with sautéed vegetables along with 4 cups of vegetable broth, 1/4 tsp of sea salt and 1/4 tsp black pepper
6. add the cheese tortellini, 1 cup fresh spinach, and 3 tbsp fresh chopped basil, and 1/4 cup grated parmesan
7. remove from heat and stir soup for another 2-3 minutes until spinach is cooked
8. serve with fresh basil and enjoy!
