Ingredients:
Oil+ Ghee
(2+1) Onions
1 Tomato
5 Green Chillies
Few Pieces Coconut
Few Peppercorns
1” Cinnamon Stick
4-5 Cloves
Few Garlic Flakes
1” Ginger
Little Water
1 Cup Hot Water
A bunch Cilantro (Coriander Leaves)
A few Mint Leaves
Method of Preparation:
1. Heat a pan add oil and sauté 2 onions with 5 green chillies.
2. Then add few mint leaves & Coriander leaves & sauté for few seconds.
3. Then allow the mixture to cool down.
4. For Green Masala Paste, Grind the above mixture with few coconut pieces, few peppercorns, cinnamon stick, cloves, garlic flakes, ginger & little water.
5. In a pan add ghee & add chopped onions & chopped tomatoes & sauté it for few minutes.
6. Then add the green masala paste and sauté it for few minutes & add salt.
7. Close the lid & allow the masala to cook for few minutes.
8. Then add hot water to adjust the consistency & then add garam masala powder.
9. Cut the boiled eggs into halves and add to the boiling gravy.
10. Add some gravy on top of the eggs & after few minutes flip the eggs.
11. Close the lid & let it cook for few minutes.
12. Your Yummy & Tasty Mint & Cilantro Egg Curry is ready jus in 20 minutes.
