Restaurant Secrets - Fixing Too-Salty Dishes - as part of the food and kitchen series by GeoBeats.
I am going to share some secrets on how a restaurant would save a dish if it was too salty. I am sure you have assumed professional chiefs never make mistakes, well that is obviously not true. We make the same amount of mistakes as a home cook does. And sometimes you over salt the dish but you do not want to throw it away or waste it so there is a few things you can do. The best thing that you can do to save a salty dish is to add a little bit of lemon juice especially when concerning sauces. If you over salt a soup for example, you can cut up some potatoes and blend them into the soup and the potato will absorb the salt inside of the soup.
Now, if it is meat that you have over salted it gets a little trickier, but what you could do is cut up the meat into little cubes and add it to a dish with broccolis and potatoes that you have not salted so thus, using the meat on the salt to salt the rest of the dish. Be creative. If you have over salted one aspect of a dish do not salt anything on the dish and it will calm itself so that your mouth would not be overwhelmed with a salty flavor and you can still continue eating that dish just like nothing happened.
