Recipe to prepare "Dahi Batata Puri", a famous recipe of Maharashtra:
Ingredients:
few puris
1 bowl green coriander-mint chutney
1 bowl tamarind chutney
1 bowl red garlic chutney
2 potatoes, boiled, peeled and diced
1 bowl curd/yoghurt
1/2 tsp sugar
1 pinch salt
1 pinch black salt
1/2 tsp red chilli powder
little black salt, for seasoning
chaat masala, for seasoning
1 bowl nylon sev, for garnishing
1 bowl finely chopped onion, for garnishing
few coriander leaves, for garnishing
Method:
For Puris:
Take 1 kg refined flour/maida, and add to it 100 gms semolina/suji/rawa; knead a hard dough of this mixture.
Cover the dough with a wet cloth piece for an hour.
Make small puris and deep fry them in oil.
For Green Coriander-Mint Chutney:
Take a mixer/grinder, and grind together 1 medium bunch coriander leaves, 1 medium bunch mint leaves, 4 green chillies, 1 inch ginger and salt into a fine paste.
For Tamarind Chutney:
Take tamarind pulp, and add to it jaggery, little dry ginger powder, fennel seed powder and little red chilli powder.
Boil this mixture properly, and then strain it.
For Red Garlic Chutney:
Take a mixer/grinder, and grind together garlic cloves, red chilli powder and water into a fine paste.
For Dahi Batata Puri:
Take curd/yoghurt; add to it sugar, salt, black salt and red chilli powder, and mix well.
Take puris, and make a hole in the center of puris, with your thumb.
Fill all the puris with potato cubes, green chutney, red chutney, tamarind chutney, curd/yoghurt mixture, black salt, chaat masala, nylon sev, onion and coriander leaves.
Dahi Batata Puri is ready to serve.
